Sponge cake is one of the most consumed dessert in Nigeria. It’s cheap and can be baked without an oven (sand in pan or empty pan). I love baked goods but I have no patience for making them from scratch. However, I was able to find a Nigerian produced bake mix at Shoprite (Asaba mall). A happy surprise. I baked a Sponge cake in forty minutes without effort and it was delicious. I added some coffee to it for some extra flavor. Don’t tell anyone. Do you like Sponge cakes?
