One of my favorite all time meals is Hainan Chicken Rice 海南雞飯. They say it was created in Singapore by Chinese immigrants, from Hainan. This is a simple dish in which the chicken, white or dark meat, is seasoned and boiled. The rice is steamed with seasoned flavors. You can find a simple recipe at Steamy Kitchen.
