What is Pollo a la Brasa?

Since I was a child I wonder how this dish is so delicious. I know thousands of restaurants around the world, but I always remember that first bite on a “Pollo a la Brasa” chicken leg. If you come to Peru you will have the chance to try and enjoy this national delicacy.

Now that I have a restaurant I have finally find out what is the secret ingredient of that amazing plate. Dedication, patience, and love for what you are doing, those are the secret seasonings for that iconic food.

In Chile it’s Pollo a las Brasas, but it’s the same concept.
