For now in South America the best is a good grouper ceviche in Paita. a shrimp ceviche in Guayaquil, a barbecue in Buenos Aires, a fechoada in Rio de Janeiro, Pique de Macho in La Paz, Chipa in Asuncion, Choclo cake in my mother’s house.
