From time to time I cook some food and this time I decided to share with you an interesting and not very difficult dish.
To prepare this dish, I was inspired by the post by @FaridTDF , who introduced Matambrе as one of the most delicious Argentinian dishes.
This dish that I want to share is very similar to Matambrе and it is very popular in Bulgaria and Hungary. The difference between the two dishes is that the Bulgarian and Hungarian versions use minced pork and veal - minced meat.
It’s about - “Stephanie roll”
The story of this dish is about a royal princess named Stephanie Belgian. She was much in love with Count Elemér Lónyay, a wealthy Hungarian and diplomat during the Austro-Hungarian Empire. But her father, the King of Belgium, had been against them for many years.
Their love was so strong that she relinquished her title and inheritance to marry her beloved. Princess Stefania was very fond of Hungarian cuisine. Count Elemér Lónyay experimented with a variety of food combinations to impress his beloved, and when he succeeded - called the dish Stephanie.
Now let’s get back to the recipe.
The necessary products for the recipe:
1 kg. minced meat of pork or veal
2 - carrot
5 - eggs
1 - onion head
2-3 tbsp breadcrumbs
4 pcs. pickles
100-120 gr. cheese
1/2 tsp salt
1/2 tsp pepper
1 tsp cumin
We start, turn on the oven at 180 degrees.
1. Put the carrots to a boil until softened.
2. In another cooking pot, boil 4 hens eggs and boil for about 10 minutes, then remove the eggs.
3. Cut the onion in retail.
4. In a deep dish, place the minced meat, chopped onions, breadcrumbs, one raw egg and spices.
5. Mix it all together until a homogeneous mixture is formed.
6. When the eggs and carrots are done, cut the eggs in half, and the carrots and pickles in long strips. The
cheese is grated using a kitchen grater.
7. On a baking paper, spread the mixture using our hands in the form of a rectangle.
8. Arrange the eggs lengthwise on the mixture.
9. Then the carrots and pickles.
10. Finally sprinkle with grated cheese.
11-14. Wrap the roll with baking paper and then with your hands close all the holes so that it is well formed at the edges and there are no holes sideways.
15. Put the roll in a greased baking pan, then pour some water on both sides of the roll. Bake for about 35-40 minutes in the oven until golden brown.
The Princess’s dish can be served with a variety of vegetables or sauces. I chose to garnish with vegetables: lettuce, tomatoes and cucumbers and it was very tasty!
