#TeamJapan - Tofu Shop Hop, Eat Japan

Tofu, the processing methods differ from country to country, developed as a unique one with a white and soft texture in Japan.

The most of tofu in Japan, which are distributed are “Kinu-goshi (lighter one) dofu” or “Momen(firmer one) dofu”.

But if you visit tofu shops, you’ll find there are many other varieties of tofu.

These are really delicious and unique!

1. Satomi-ya

For example, Satomi-ya has one of the best tofu I’ve ever had in my life. It’s “Ken-min[絹綿] Tofu”.

This tofu has the best of worlds of “Kinu-goshi [絹ごし] dofu” and “Momen[木綿] dofu”.

But why can this local tofu shop make such delicious one?

It’s because this shop has the tofu laboratory (!) next door. They eagerly research on tofu and make them.

2**. Maruyoshi-Shokuhin**

At Maruyoshi-Shokuhin , I recommend that you drink the soy milk(This is not tofu but we can buy it here).

It’s so thick as some of people use spoon to drink. It will be interesting experience.

3. Kasahara

Kasahara has some seasonal tofu. When I went there last time, there were green soybean flavor and sesame flavor.

My recommendation is Unohana[卯の花] and Zaru[ザル] tofu.

And strolling this shopping street where this shop in is also fun. There are so many tiny shops there. It’s cute.

In addition to the variety of tofu, there are also various types of tofu dishes.

About 230 years ago, a book called “Tofu Hyakuchin(豆腐百珍)” was published that explains how to cook 100 kinds of tofu dishes.

This depth of tofu is one of the reasons why tofu has been widely loved for a long time.

Recently, the local tofu shops have been declining. Tofu used to be delivered to households daily, but that tradition has been lost in most cities.

But still interesting tofu shops live all over the place.

As a local guide, I would like to introduce many local and unique shops from now on!

[Japanese] お豆腐屋さん巡り

お豆腐の加工法は各国ごとに異なりますが、日本のお豆腐は、白く柔らかい食感を持つ日本独特の食品として発達しました。

流通しているほとんどは、絹豆腐か木綿豆腐です。

でも、お豆腐屋さんへ行けば、よりたくさんの種類の豆腐を見つけることができます。

お豆腐屋さんのお豆腐は、本当に美味しくて個性的なものばかりです。

例えば、さとみや豆腐店さんでは、私が今まで食べた中で一番美味しい「絹綿(けんみん)豆腐」を売っています。木綿豆腐と絹豆腐を、絶妙に良いとこ取りした味です。

でもなぜこのような美味しい豆腐を、町の小さなお豆腐屋さんが作れるのでしょうか?

おそらく、こちらのお店が、お隣に**お豆腐研究所(!)**を設けているからかもしれません。この研究所で、よりよいお豆腐を追求しているそうです。

丸吉食品さんでは、お豆腐も美味しいのですが、ぜひ豆乳を飲んでみてください。あまりにも濃くてスプーンで飲む方もいるようです。びっくりする濃さは貴重な体験になると思います。

とうふのかさはらさんでは、季節もののお豆腐をよく見かけます。私が8月に訪れた時は、枝豆豆腐とごま豆腐を見かけました。

オススメは卯の花とザル豆腐です。

そしてこちらのお豆腐屋さんのある霜降銀座商店街もオススメです。

小さなお店が軒を連ねており、歩いていて楽しさが絶えません。

こうした豆腐の種類に加えて、豆腐料理にもたくさんの種類があります。

約230年前には、「豆腐百珍」という、豆腐料理100種を紹介した本も出版されました。

こうした豆腐の奥深さが、豆腐が広く長く愛されている理由の一つなのだと思います。

最近、町のお豆腐屋さんは減りつつあります。

かつては各家庭に豆腐が配達されていましたが、ほとんどの街でそうした伝統は失われてしまいました。

しかし未だに面白いお豆腐屋さんは至るところにあります。ぜひ皆さんも見つけてみてください。

ローカルガイドとして、私もこれからも町の個性的なお店を紹介していきたいと思います!

Despite everyone in my country everyone is continuously mentioning tofu, I am realizing now that we know just a little bit about Tofu

It is amazing to see how many thing we can do with soy milk. I am just watching your photos, my eyes wide open, and a big smile

Thank you very much for sharing the first post of #TeamJapan! You’ve chosen a great topic. Tofu is one of the symbols of Japan when it comes to food. I didn’t know that you even have a book dedicated to cooking tofu. When I lived in China one of my favourite dishes was 麻婆豆腐 (Mapo doufu) - fried tofu in spicy sauce.

I can’t stop imagining one tofu shop in Japan suddenly become famous all over the world someday lol.

And Tokutaya is nice for me because it’s really close to a station. The dishes are seemed so delicious! I’ll check it!

Yes, soy milk is amazing food. It makes so deep world.
Especially tofu is rich, not just in protein from the soy beans, but also iron, vitamins B1 and E, zinc, and so on.
I’d love to eat Italian cuisine using tofu someday!

thank you for this nice post about tofu! I like it but I believe it won’t be the same taste when eating it in one of those local shop compared to an international food chain somewhere else in the world, just like any other local product, especially with local receipts. It is also sad to read that the shops are declining, local and old traditions are always nice to know more about a specific culture.

Tofu is so healthy that you don’t need to feel guilty to eat. These are, as it were, "Guilty-free food” in Japan lol. You can eat as much as you like!

When I got gastroenteritis in this spring, I learned about Tofu that has the highest protein and easy on the stomach. At that time, I thought I’d like to write the article about Tofu someday :slight_smile:

I really enjoyed your very informative post and photos about tofu @Anzu . Like everyone else here I love tofu but I tend to like it crusty on the outside when grilled, I don’t know what that is called!
