I am very excited to share this post which is so close to my heart as it is a part of food that I love and I am sure many INDIANS feel the same. This post is for my fellow local guides to make them understand about the street food culture of INDIA. Well before I get into it I have a question for you…
HAVE YOU EVER CRAVED FOR THAT ONE STREET FOOD ?
WHAT IS THAT STREET FOOD THAT MAKES YOUR CITY POPULAR ?
Well, we must have started imagining all our favourite dishes. Mine is the street food chaat which we have it here in INDIA. The chaat items still vary from one state to another but here specially in MUMBAI, MAHARASHTRA we have ‘PANI PURI’,’PAPADI CHAAT’,’SEV PURI’,’BHEL PURI’,’DAHI PURI’,’RAGDA PATTICE’,’DAHI WADE’ and many more. These items are originated in MUMBAI and are so in demand the whole year and their taste have its unique connection with the location. If you are MUMBAI and you don’t have pani puri u would regret it your life.
There are various names of this same dish in different parts of India its called “Gol Gappa”in New Delhi, Jammu and Kashmir, Haryana, Bihar,MP,HP. ”Phuchka” in eastern parts of India like West Bengal, Jharkhand. “Pakodi” “Phulki”in Gujrat and Kutch. “Paani ke patashe” in parts of Haryana, Lucknow. “Gup chup” in parts of odisha, Hyderabad. “Padaka” only called in Aligarh in Uttar Pradesh.
Street food comes in the category of that huge junk food where my conscious healthy mind gives me a alert to stay away from being sick (i always tend to fall ill due to the junk food) but i cannot compromise with my cravings for these dishes. Then my mom found the her own trick of fooling me around by making it at home. And that’s how i started cooking and making all of these at home. Soothe quality is controlled with upgrading the nutritional value of it. I will share my recipe for all of you do try it at home.
Let’s start by the Ingredients first:
¤ One packet of puri (puffed fried pancake)
¤ One bowl of chopped tomatoes
¤ One bowl of chopped onions
¤ One bowl of boiled smashed potatoes
¤ One bowl of cooked Yellow split gram (moong dal)
¤ One bowl of green chutney
¤ One bowl of tamarind chutney
¤ One bowl of fresh sweet curd
¤ One tablespoon of Chaat masala
¤ For garnish: Bowl of Sev, boondi, fresh coriander and pomegranate
(Sev and boondi are the fried Indian snacks made out of chickpea flour paste and ajwain)
Procedure:
Step 1: Crack the puri on the top and make a small opening for the filling.
Step 2: Add a small amount of smashed potatoes and sprinkle the chaat masala (if u don’t have chaat masala use a substitute as black salt)
Step 3: Now add the cooked yellow split gram to the puri.
Step 4: Then add the other chopped items like onion and tomatoes.
Step 5: Now add the wet ingredients half a tablespoon of green chutney, red chutney, and the curd.
Step 6: And garnish it by putting Sev and Boondi (if u don’t have these add any crunchy to add the texture ) with coriander and pomegranates for that colourful touch.
About the key ingredients:-
Green Chutney: In a grinder put some fresh coriander with some pudina leaves and curry leaves. Add 2 green chilli with some chopped garlic and ginger and cumin seeds. Then grind them all. Add some water to make a fine paste and the green chutney is ready !
Red Chutney: That tangy tamarind chutney. Soak the tamarinds and some dates in hot water for 15 minutes and then strain out the seeds and fibres. Then take a small pan heat some oil and put some cumin seeds and let them crackle. Add ginger, red chilli powder, asafoetida, sauf powder, pinch of salt add the strained pulp of dates and tamarind. Let this cool down and the red chutney is ready !
I just love how a simple chutneys can add such a wholesome taste to the whole dish. This is the best way to make junk food healthy is by making it at home with fresh ingredients and healthy substitutes.
