Olives are a winter raw fruit. Many people like me like olive pickles. Although olives are only available in early winter, pickles can be preserved throughout the year. This spicy-sour-sweet pickle can be served with Khichuri, rice or any kind of food. So I made this yummy pickle three days ago.

Ingredients:
Olives 2 kgs
2 cup of sugar
1 cup of mustard oil
5 pcs dried chillies
2 teaspoons of whole coriander
2 teaspoons of cumin
2 teaspoons of whole anise
2 teaspoons of whole blackberries
1 teaspoon of turmeric powder
2 teaspoons of garlic paste
2-3 pcs bay leaves
2 pieces of cinnamon
2-3 teaspoons of salt (as taste)
1 Liter of water
1/2 a cup of white vinegar
Method:
First wash and clean the olives well and take them in a pot and boil them with 1 liter of water and one teaspoon of turmeric powder for 8-10 minutes. When it is cooked and soft, take it out of the stove, cool it and mashed it.
Then all the spices should be lightly fried separately in a low flame pan. Not all can be given at once, it may burn some spices. Care should be taken that the spices are not over-fried or burnt at all, otherwise the taste will be bad. The fried spices should be finely ground in a grinder.
Now heat oil in a pan and shake a little with bay leaves and cinnamon and add garlic. Cook over medium heat. If the garlic is light brown, it should be given with the olives. Now you have to add oil, salt, sugar, vinegar & allspice powder. Then dry the pickle water well and fry it slowly. Before taking it out of the oven you must test the salt and sugar.
Save for long time:
If you add vinegar, the pickle stays good for many days. This pickle can be stored in a clean glass jar outside of the refrigerator or in a normal refrigerator for a long time.

Olive pickles are a spicy food, it’s contain a lot of beneficial ‘dietary fiber’ or ‘fiber’. Because olive peels contain a lot of fiber. This fiber helps in digestion of regular food. As well as helping to reduce the risk of cancer of the stomach, small intestine, colon.
