It is one of the most oldest Arabic food. It called Stuffed zucchini ( Mahashe ) in Arabic Language.
What are Mahashe?? As we see in the plate, a pieces of Eggplants, potatoes, Bell Peppers and Upreti. They are all stuffed with a tasty fresh ingredients, the fresh ingredients will be cooked inside the pieces while cooked processing. The ingredients combined from:
1.Chopped Meat. 2. Chopped Italian Parsley. 3. Rice. 4. Spices, and 5. Garlic.

A home made not in A restaurant. It is hardly to find this food in any Arabic restaurants. Even Arabic restaurants dont cook this food.The food you are seeing were cooked in my house. It is can be taken as a lunch or dinner, lunch is more common.

I guess this is a food more common to the region of Jordan and Egypt, am I right? As a person who grew up in Morocco, I’ve never seen anything like this there.
Lo que comentas sobre que no se este tipo de comida en los restaurantes, es verdad, en mi caso cuando visito Buenos Aires trato de comer comida árabe y en general estos platos no existen en las cartas, solo lo puedes comer en tu casa. Lo que si se encuentra es lo que en mi casa llamamos niños envueltos, que es lo mismo el relleno, pero envueltos con hojas de parra o con las hojas de repollo.
En mi caso, me gusta mas el zapallitos para rellenar con el arroz con carne o el pimiento, los sabores son mas definidos.
Am so happy to answer you. As a middle East where Arabic countries’ border stuck, there are many differences
about meals ! For example , the gulf countries, have their own specific meals as a kind of food that cooked in their houses. We in the center of middle East ( Syria, Palestine, Jordan, and Lebanon ) know the gulf countries meals, but we don’t do them in our houses, we can try them in a restaurant. In Egypt also little similar to us, The Arabic countries located in North Part of Africa, totally different from us ( Syria, Palestine, Jordan and Lebanon ) and gulf countries.
The meal I’ve posted is specialist first cook processing to us, the four countries mentioned above.
That’s doesn’t mean people live in Gulf countries don’t know what we eat. And vice versa.
In another words, each Arabic meals have the origin where come from, and which country first cooked it. In addition, all meals are available in restaurants if you know the name of the meal, you can try it.
Only little not exist in restaurants like the one I’ve posted.
