I am facing a review count bug on Google Maps since June 13th.
My actual review count is more than 1100, but my public profile is only showing 960 reviews. My reviews are not deleted, they are still visible under “My Contributions”, but the total count on my profile is incorrect.
I have already contacted Google Support via email and created multiple Case IDs, but I have not received any reply or call back.

As a business, you should address your issue on the Google Business Profile Community
I can confirm that actually 960. Explaining why the number of reviews is decreasing is quite easy. Just click on the (i) near the counter
Honestly, after checking your recent reviews, I believe more and more reviews will disappear.
All of them are 5 stars, with just a very short text (good service, good products, and so on) and all written by people who only wrote that review. In short, all of them sounds fake, probably solicited, so I will not be surprised if Google decides to remove them. In some extreme cases, when the amount of suspected fake reviews is very high (you said that more than 140 were removed) Google may take an extreme decision, and remove the business from Google Maps.
So, if you care of your business, I would like to suggest you to be more cautious.
Another bad behaviour is to use your Local Guide account to contribute on your own business. As you are the owner, you should add your photos as “the owner”, without getting points for that contributions
