So today,this is one dish that rarely come along on a regular basis. It is called Nkwobi in local Ibo(Eastern) parlance in my country and also originates from same region. It is often ordered from local eat-outs or perhaps one can decide to prepare it at home. It is mouth-watering and tasty.
Since I had no time to prepare it,I had to order it from a local eat-out dining some kilometers from my neighbourhood.
So the ingredients for preparation goes thus:
Cow leg
Utazi(local name) leaves
One Onion bulb
Two tsp grounded habanero pepper
Pinch of salt
Seasoning of choice
Grounded potash
Grounded crayfish
Oil bean seasoning- ugba in local parlance
Preparation:
Cut the cow legs into moderate chunks and wash thoroughly. Bring to boil and add your seasoning and salt. Set aside when done and pour out the broth in a bowl.
Make the sauce: Mix potash with palmoil. This is the vital part of the dish. The potash is first dissolved in a small bowl of water (litttle quantity)
Pour the watery potash over gently heated palmoil. Ensure there are no lumps of potash. The red oil begins to turn yellow and thickens . You can continue to add the potash paste in the pot until you arrive at the desired thickness. You stir gradually and low the heat.
Pour the cow legs into the cooking pot and turn it in until it is well incorporated into the sauce.leave to cook for five minutes.
After five mins,you bring down from the heat and serve warm in a bowl.
You can garnish it with parsley leaves,Utazi leaves,and some slices of onions.
It is an healthy meal as it contains less calories. All the ingredients are natural. So you can try a dish today. Order one from a local eat-out like I did or prepare it by yourself.
