Do you crave for restaurant style food in this lockdown ? Yeah… me too…
I just tried re-creating the restaurant style Veg. Hakka noodles and they turned out super yummy and delicious… It does require some preparations but the result is amazing !
This is an egg-free , vegan / vegetarian , no msg , filled with lots of veggies and super tasty recipe so do try !
Hakka noodles : 1 packet (200 grams)
Oil : 2 tsp
Carrot : 1 large
Green capsicum : 1 large
Cabbage : 1 small size
Spring onion with greens : 1
Garlic cloves : 4-5 (finely chopped)
Dark Soy sauce : ½ tsp
Red chilly sauce : ½ tsp
Black pepper powder : ½ tsp
Salt to taste
Spring onion greens for garnishing
Method
Heat sufficient water in a non-stick pan and bring to a boil. Add 1 tablespoon oil and noodles to the water and cook for 10-15 minutes.
Cut carrot and capsicum into thick strips.
Strain the noodles under running water and place in cold water.
Shred cabbage. Slice the spring onion bulb and reserve the greens.
Heat remaining oil in a non-stick pan. Add garlic and sauté for a few seconds. Add sliced spring onion bulbs and mix well.
Add carrot strips, capsicum strips, shredded cabbage, salt, black pepper powder, toss and cook for 2-3 minutes. Add soy sauce, mix and cook for 1-2 minutes.
Add noodles and toss well.
Diagonally slice reserved spring onion greens.
Garnish noodles with sliced spring onion greens and serve hot.
