I last shared with you how I recreated Shake Shack’s famous burger at home and now I’m back to share about how I made Emily’s pepperoni pizza at home. I have been recreating local restaurant’s recipes as part of the cooking competition I’m in — #qkitch— with fellow team member, @karenng .
Before self-isolation, I loved to visit Emily (or one of their other restaurants like Emmy Squared) at least once a year and only not more often because it’s hard to get in! Not only does Emily have killer pizza, but they also have an insanely good burger, but perhaps that’s another week’s challenge!
What makes Emily’s pepperoni pizza so delicious is that it’s different from a typical slice you’d find in the many pizzerias in NYC. It’s not a round, super crunchy, thin slice that is in the shape of a triangle once served. Even more: the cheese goes UNDER the sauce and not on top of it! The most important part of this pizza is the pepperoni to me so it was the first thing I bought.
I chose their pizza for our group because it’s been a while since I’ve made homemade pizza and if you’re going to make pizza, why not go for the best? The recipe calls for bread flour though like in many cities, it’s sold out as more and more folks are baking at home. Luckily, I was able to trade craft beer for bread flour.
I didn’t take many pics of the process but I did first start by making the beautiful pizza crust with my KitchenAid mixer’s dough hook. After letting it rise for a short period of time, I immediately set out to make my pizza with just three ingredients. Starting with the mozzarella cheese, topping it with sauce then with the pepperoni I cut to size.
I patiently waited for my pizza to bake and it didn’t take too long. In fact, the crust was perfect and while I usually cook my pizza longer, I didn’t want to cook it too much so that when I reheated it, it felt like a fresh slice, but as you can see, it came out really well and tasted even better!
I plan to make this pizza again (and again!) but what I love most is seeing everyone’s twists on recipes. Next time, I think I’ll add some fresh garlic and onion!
