Today I would like to share about a very popular Indian stuffed bread - Aloo Paratha (Stuffed potato Paratha)
It is one of the most loved food item in Northern Part of India but made in different parts of country with a little variation,
Paratha is consumed as breakfast or meal,
it has different types of stuffing
there are some amazing restaurants experimenting with some twisted stuffing like Pizza Paratha, which is loaded with veggies and cheese, there are also dessert parathas which are stuffed with chocolate or hazelnut sauce.
some of my favourite places to eat parathas are:
khaas parathas and A popular local Paratha stall.
so here’s the one I recreated.
Ingredients for Base :
Whole wheat flour 1 cup
Salt a pinch
Oil 2 Teaspoon
Water for kneading
Ingredients for stuffing :
Boiled and mashed potatoes 3-4 medium sized
Half Teaspoon Dry mango powder (if not available it can be replaced with Chaat Masala)
1 and half teaspoon Garam masala
1 table spoon crushed ginger and green chillies.
Salt to taste
Fresh coriander leaves chopped.
Steps:

Add salt, oil to the wheat flour and knead a firm dough, cover it and keep aside for sometime

In a separate bowl / plate add mashed potatoes, salt, Garam masala, dry mango powder, ginger - chillies paste and coriander leaves, mix it well.

Make a ball of kneaded dough, Roll it a bit

Add the stuffing, you can also add finely chopped onions for crunch

Take the corners and close the paratha into a ball and roll it flat

Make sure to roll it lightly or the stuffing will come out

Put it on a hot non stick pan or tawa and let it turn a little brown

Apply ghee (clarified butter) or salted butter on both side while cooking

Take out apply some more butter / ghee

Serve it with curd, coriander chutney and pickle
My Local Guide friend @Ant_Bad_Yogi visited India and she described how she loved to eat Paratha for 4 weeks while she Stayed at Noida, she really liked having paratha everyday along with the Indian Masala tea.
She always asks me if I could make an Aloo Paratha, so finally I made one
