A ramen shop with a focus on miso. There are three types of miso: Hokkaido, Shinshu, and Kyushu. Miso in Hokkaido is rich and reddish. It has a high salt concentration and is easy to feel spicy. Shinshu miso is slightly rich and light in color. It has a little sourness and is produced nationwide. It accounts for about 35% of domestic miso. Kyushu barley miso is characterized by its sweet and light red color. The most recommended one is Hokkaido miso. Especially the potatoes with toppings are delicious!

味噌にこだわったラーメン店です。味噌は北海道、信州、九州の三種類。 北海道の味噌は濃厚で赤色系です。塩分濃度が高く、辛さを感じやすいです。 信州味噌はやや濃厚で淡色です。やや酸味があり全国的に生産されてます。国内の味噌の約35%を占めています。 九州麦味噌は甘口の味噌で淡い赤色なのが特徴です。 一番おすすめなのは、北海道味噌です。特にトッピングのジャガイモが美味しいです!

The video is very nice and I got so hungry after watching it. I love all kind of soups and ramen is one of my favorite especially in winter time. Which is your favorite type of miso? Can you prepare ramen for yourself or you prefer to eat it in a restaurant?
