A ramen shop with a focus on miso. There are three types of miso: Hokkaido, Shinshu, and Kyushu. Miso in Hokkaido is rich and reddish. It has a high salt concentration and is easy to feel spicy. Shinshu miso is slightly rich and light in color. It has a little sourness and is produced nationwide. It accounts for about 35% of domestic miso. Kyushu barley miso is characterized by its sweet and light red color. The most recommended one is Hokkaido miso. Especially the potatoes with toppings are delicious!
