As the entire world is under a pandemic situation due to COVID19, most of us are at home, whether it is a lockdown or self isolation. When we cannot go anywhere, there are a few things that can be done at home to keep ourselves busy. I honestly wish the situation gets better for the world in general. People are currently working from home and working for home, I am stuck with the same situation. Being a foodie, I miss going out to restaurants, but everything is closed down around my city (Karachi, Pakistan), except for medical stores and supermarkets. Even they have to close down at a particular time. Anyway, during this time I decided to write down the recipe of sticky orange chicken that I made earlier. It is very easy and delightful.
Ingredients for chicken:
- Boneless chicken cubes - 100 grams
- All purpose flour to coat chicken - 4-5 tbsp
- Egg - 01
- Salt and pepper - according to your taste
- Oil - to fry chicken
Ingredients for orange sauce:
- Fresh orange juice - 2 oranges
- Sugar - 2 tbsp
- Salt - according to your taste
- Vinegar - 3 tbsp
- Soy sauce - 2 tbsp
- Red chili flakes - 1 tsp
- Garlic (minced) - half tsp
- Ginger (minced) - half tsp
- Fresh lemon juice - 1 lemon
- Hot sauce - 1 tbsp
- Honey - 2 to 3 tbsp
- Corn starch - 1 to 2 tbsp as required
- Water - 3 to 4 tbsp
- Orange zest - half tsp
Method for orange sauce:
- Add orange juice, honey,vinegar, soy sauce, ginger, garlic, chili flakes, water, hot sauce, lemon juice, and salt in a cooking pot
- Cook it over medium heat - bring it to a boil and keep stiring
- Add corn starch and cook till thickened
- Turn off the heat and add orange zest
- Remove from heat and let it cool down for 10 minutes (don’t refrigerate, just keep it aside on room temperature
Method for chicken:
- Marinate chicken with salt and pepper, keep it aside for half an hour
- Next, coat chicken cubes with flour, then egg, then flour again
- Put it directly into oil and start frying until it turns light golden brown
- Once you are done frying, remove access oil using a paper towel, make sure you keep it in a way that it doesn’t become soggy
Note: start making orange sauce first and meanwhile when it is almost done, fry chicken. When both are ready, add chicken into the sauce and coat it well. You can serve it with rice, I served it with potato wedges.
