I want to share with you a recipe of the most delicious_carrot cake
_ in the world. During self-isolation I baked it several times. My family eats it in minutes
So, you will need: 3 carrots
, 2 pears
, 1 orange
, 100 gr of nuts
(walnuts or pecans, or any that you like), 550 gr of sugar, 4 eggs
, 340 gr of flour, 245 gr of sunflower or corn oil, 8 gr of soda, 1 teaspoon of cinnamon, 1.5 teaspoon of nutmeg.
First prepare the toppings:

Peel the carrots and grate

Peel the pear peel and seeds, cut into small cubes, add 50 gr of sugar, cook for 3 minutes. Drain the syrup so that only slices of pears remain.

Cut the zest from the orange, cut it into small pieces. Squeeze the juice of orange, mix with zest, add 50 gr of sugar, cook for 5 minutes. Drain the syrup so that only slices of zest remain.

Fry nuts in a pan. Melt 50 gr of sugar in a saucepan, cook for 3 minutes, add the roasted nuts, mix. You will get caramelized nuts
. Put nuts on a silicone mat at a distance from each other. After a few minutes the caramel will harden.
It’s time to make dough.
5) Stir in flour, soda, cinnamon and nutmeg in a bowl🥣.
6) In another bowl whisk with a mixer the sunflower oil and 400 gr of sugar. Add 4 eggs
and whisk well.
Add dry ingredients (flour, soda, cinnamon, nutmeg) and whisk more.
7) Preheat the oven to 170 degrees Celsius
Add the zest of orange
, slices of pears
and caramel nuts
to the dough. Stir slowly and pour into a baking dish. Put the mold with dough in a preheated oven, bake for 40 minutes.
In the meantime prepare the cream. You will need: 100 gr of butter, 100 gr of powdered sugar, 300 gr of cream cheese.
Whip everything in a bowl, add a little vanilla. Cheezy cream is ready.
Remove the dough from the oven, cool, cut, smear with cream. Cake can be garnished with caramel nuts
