Pregnant winter gourd

ញាត់ត្រឡាច reads as Gnoit trolach [Stuffed Winter Gourd] is a hot soup easy to make and easy to digest. I called it pregnant winter gourd because it has stuff inside like a baby! It is good to have it during winter or cold weather. I love to share the recipe in the below text.

Ingredients


- Meat: Pork, dried shrimp, dried squid
- Vegetables: Winter gourd [green or young fruit [same with bitter gourd and cucumber]]
- Spice: pepper, brown sugar, salt, soup powder, garlic, glass noodle/cellophane noodle/fensi, dried fungus, dried mushroom, spring onion, fish sauce

How to prepare


1. Clean pork and cut it into small piece, chop them into tiny pieces, keep aside.
1. Dried shrimp, dried squid, dried mushroom, dried fungus and fensi - soak them into water (separately), after 10mns bring them back and then clean and chop them, keep aside.
1. Peel the garlic, take chopped pork, dried shrimp, dried squid, dried fungus, dried mushroom and fensi - mix them together.
1. Add salt, sugar, pepper, fish sauce and soup powder into the mixture and mix them together again for 5mns.​​ If you can use all to stuff in the gourd, then use them to put in the soup.
1. Clean the winter gourd, peel it and cut in to 2-3 pieces per fruit, take out the core/seed.
1. Stuff the mixed spice into the winter gourd [some case they stuff won’t stay once you cook so people use tooth stick to block its end.
1. Cut the spring onion, divide leave from the stem. Cut them separately and put aside from each other

How to cook


1. Boil water in the pot until boiling
1. Put a bit of salt and fish sauce, and then put the stuffed winter gourd into the pot [if you keep some of the mixture from stuffing the gourd, put them here into the boiling water.
1. When the water is boiling, put sugar, pepper, and taste if they suit your taste, add more spice to suit your taste
1. Keep the winter gourd boiling for about 15-20mns to properly cook the stuff inside the gourd. Put the chopped onion stem in
1. Taste if they are okay, put them out of the fire. When eating, put the chopped onion leave in the plate and they are ready to eat :blush:

** For vegetarian or those who don’t eat pork, you don’t need to put pork. Dried shrimp, squid and mushroom are enough to make the stuff. I have never seen people use other meat besides pork but you may try chicken or beef.

Please note that, the same process can be use with Bitter Gourd and Cucumber, using the same ingridents but different vegetables.

Yes, just did it, tasted wonderful.

Last two weeks, we did with bitter melon. It tasted so good :slightly_smiling_face:

If you cook with bitter melon, to get rid of bitter taste, you boil the vegetable first for a while, then soak it with cold water, bring it out and stuff the core like this one. It is not so bitter anymore. I love the winter gourd more than bitter melon @MukulR

@Sophia_Cambodia I can’t imagine how the flavor of mixing pork and dried shrimp is likd, but I think it’s perfectly balanced and delicate.

I stuff winter gourd with rice, parsley, tomatoes, egg and a little bit of cheese. Then I cook it in boiling salted water and I wait that rice is ready. Simple and easy.

You can try our recipe my dear @BeatrizAguilar chop the stuffing together, mix them with spice and see how it tastes!

But it surprised me you have done similar things - with rice? we never done that. We have other way of roasting bamboo that stuff sticky rice inside. It is called Krolan [sticky rice in bamboo stick roasted on fire]

That looks delicious, @Sophia_Cambodia ! Thank you for sharing. In Bulgaria, we have a similar dish but instead of gourd we use peppers, and sometimes tomatoes to stuff them with ground meat and rice. It’s actually one of my favorite dishes.

@BeatrizAguilar , I also use rice, but in my case I stuff peppers which I then bake in the oven. My personal favorite is using red peppers, because they are a bit sweeter than green ones. :smile:

Oh, glad to know about that @KlaudiyaG we use bitter melon, tamato, and cucumber besides winter gourd! We cook them as soup, not bake like yours.

The taste is quite good and very good for colder weather. It is common in typical families even in rural areas of Cambodia.

It’s the first time I hear about bitter melon. They look like a mixture between a zucchini and a cucumber. Very interesting, @Sophia_Cambodia . I would love to try the stuffed winter gourd or the bitter melon one. It really piqued interest. :slightly_smiling_face:

Oh dear, it is medical plant and older people really love it. It is bitter though like neem leaves @KlaudiyaG so you have to boil the bitter melon in the hot water first before you take them to put stuffing mixture. Some people would love the bitter taste of it. But I cannot stand it, too bitter for me.
