potatoe green sauce and plain rice

It’s high time I posted some nice food post so here comes another nice West African dish. This is exclusively Liberian as far as I know. It’s quite easy to make and less time consuming. Unlike the palm butter and other Liberian dishes.
INGREDIENTS
- Sweet potato greens
- Onions
- Garlic
- Pepper
- Ground nut oil
- Salt to taste and meat fish chicken whichever you prefer.
This is what potato green looks like for those who are from the other side of the planet.
Preparation.
- Wash the following ingredients and slice: onions,garlic,pepper and the greens.
- Add abit of the sliced onions and garlic into the bowl of sliced green.
- Set on your sauce pan and pour in oil and the greens and fry on low heat till it’s well fried. The quantity of oil depends on your personal preference.
- Then add the remaining sliced or blended pepper garlic and onions. Keep the heat low and keep stiring to avoid burning
- The last thing goes in is the cooked meat or fries fish or chicken.
- Note that very little water is needed if necessary at any stage in the frying.
In this case I had fish and meat. It is best served warm and with rice. However boiled yam is not ruled out either. Potatoe green sauce is not only nutritious but very healthy. That’s lunch over now and hope you enjoyed it.
