Groinne opened up PINKMOON cafe recently in Cork City. She has wanted to open up a cafe of her own to contribute to the community around her. Her background lies in Marine Biology Research. The academic side of things kind of got her down. She wanted to do something a bit more hands on and practical. Something that she could see the results and feel that she has made difference.
The song PINKMOON has been her favorite song for years. She often listen to Pinkmoon while she would be studying or doing other types of work.
Pinkmoon
At PInkmoon, they attempt to make all their food fresh and daily. They make a lot of their own recipes and buy local produce when they can buy local. Being a surfer and an avid outdoorist, she wants to encourage a healthy lifestyle. A lifestyle that makes little or no impact on the environment around her. Pinkmoon is a zero waste cafe. They use everything and recycle what remains. Their cups are bio degradable. She buys her coffee from a local roaster that buys their coffee from small sustainable farms.
Essentially, she wants to make a difference to her community. By providing a brights space that welcomes everyone. A place that people can come in and work, meet friends, meet new people, or have a healthy snack. Thus, the big windows and bright space.
Through the week and month, PInkmoon looks to host a variety of events. She hosts events such as open mic nites, poetry readings, meet-ups, and jam nites. In addition to the fun and entertaining nights, she is also hosting zero waste meetings and other events that help improve the community. At the moment, she is looking into a program that counts bumblebees.
