PINEAPPLE UPSIDE DOWN CAKE
Ingredients
425g tin pineapple rings in juice
4 tablespoon soft light brown sugar
235g unsalted butter softened plus extra for greasing.
175g caster sugar
3 eggs beaten
1/2 tablespoon vanilla
175g self raising flour
1 tablespoon baking powder
2 tablespoon milk
8 -10 berries
A thin film plastic
Pinch of salt
PREPARATION
Pre heat the oven to 180C and butter the sides of your baking pan( 20cm or 8inch size. Its optional to line the baking pan with a thin film plastic. (In this case I did)
Put the soft brown sugar and 60g of butter in a small frying pan. Melt over medium heat.
Cut seven of the pineapple slice rings in half to make semi circle and arrange around the tin. 6-7 slices may be enough depending on tightly packed you want the design to be. Place a whole ring slice in the middle. Also arrange the berries in the middle of the pineapple apple ring slices.
Gradually add the eggs,mixing well between each addition .
Add the vanilla and mix again.
Sift the flour,baking powder and salt into a bowl,add milk until it is smooth
Carefully spoon over the arranged pineapple apple ring slices and spread level.
Bake for 30-40mins until risen or golden brown and a skewer inserted into the middle of the cake comes out clean.
Leave the cake to cool down for some minutes and then turn it upside into a serving plate and your cake is ready.
i like pineapple @SholaIB . In Indonesia , there is a very delicious pineapple, which comes from eardrop. because it’s so sweet it’s called honey pineapple

@SholaIB Wow, I’ve never seen a pineapple cake for the first time. If you put a berry in the center of the pineapple, it looks like a flower and it’s wonderful. And it looks very delicious.
I like pineapple juice very much, but had never tasted pineapple cake. Hope someday I could make it @SholaIB . You are are great cook. Thank you for sharing such a beautiful cake and its recipe too.
