Phuchka is very much a part of Bangladesh’s national identity. Puffed up flour shells, stuffed with potato, boiled lentils, some spices for flavor, chopped onions, green chili, and coriander leaves… served with sweet tamarind dipping sauce! It sure is going to leave your mouth watering. There’s a constant debate in the community about which “Mama” makes the best phuchka in Dhaka city. Phuchka stalls are almost on every side street. They are almost always located next to a school, a playground, coaching centers and outside shopping malls. Prices are about Tk 30 a plate and typically you are served 10 phuchka stuffed shells.
The sweet tamarind sauce is mostly what sets a good Phuchka Mama from a mediocre Phuchka Mama.
Most people agree that Phuchka sold in New Market area is the best while some people swear by Baily Road phuchka stalls.
