Pastelón - Plantain Lasagna

Plantain Lasagna aka Pastelón is the Puerto Rican version of lasagna. Instead of using pasta, we cut the yellow (ripe) plantains in slices and fry them, then follow the same procedure of the lasagna by covering the bottom of your casserole with a layer of the fried plantains, tomato sauce, with spiced beef, and work your way to the top, then finish with mozzarella and Parmesan cheese. This dish has an awesome combination of sweet and savory.
