Pove del Grappa, Italy, is located at the foot of Mt. Grappa. It is also called “Conca degli ulivi” (en: Basin of Olives) because the terrain and the micro-climate is very good to cultivate tree of olives. It is also the northernmost point of the region where this tree lives.
Its quality was recognized by the European Community with the Protected Denomination of Origin (DOP) in October 2001.
This oil is characterized by a green-gold color with modest yellow variations, very low acidity, a fruity smell of various intensity and a fruity flavor with a bitter sensation for fresh oils.
The cultivation is done by small farmers, often each family has their own field with 20/30/50 trees, it is rare to find large fields.
I helped a family to collect the olives and then to go to the oil mill to extract the oil.

Hi @PaulPavlinovich , in the location of the post, Pove del Grappa, due to the vocation of the place, olive are part of culture from long time. In the past it was less important because other culture was more profitable (like tobacco), but in the last 2/3 decades the olives has increased their importance. In the rest of the region it is cultivated only on familiar base because it may not compete in quality and quantity with other region in the center or south of Italy where there are very large cultivation.

This one was not filtered, so just squeezed it has a bit different taste. On a roasted bread it’s wonderful .
What better time than this to publish a post on olive oil? Great @FlavioDA , we needed a post like that! Even here in Sardinia, in the family olive grove, we are at full capacity with the processing of olives … We try to focus more on quality than quantity usually given that our olive trees are now 100 years old!
