No solo paella

Seguro que muchos conocéis el plato de España llamado paella, aunque igual no todos sabéis que paella es tanto el recipiente, la sarten con dos asas, como una determinada receta de arroz que se hace en una zona del este de España, Valencia.
Posiblemente muchos habréis tomado arroz en ese recipiente, la paella, pero es más raro que hayáis tomado la receta de paella, lo más probable es que hayáis tomado un arroz de los muchos que se hacen en este recipiente, y más habituales en la zona de Alicante y Murcia, como puede ser un arroz de marisco, un arroz con bogavante, un arroz del señoret, un arroz con pata, un arroz con conejo, un arroz con magro, un arroz al horno, un arroz de montaña, y así hasta más de 100 recetas distintas que puedes encontrar en algunos restaurantes de la zona de Alicante y Murcia, el conocido como Levante español.
La receta de paella valenciana es la siguiente:

Pollo (700 grs. Unos 8 o 10 trozos medianos)

Conejo (300 grs. Unos 4 o 6 trozos medianos.)

Una cucharada sopera( no muy colmada) de pimentón rojo dulce molido .

Hebras de azafrán al gusto o en su lugar una cucharadita de café de colorante alimentario

12 cucharadas soperas de tomate natural rallado

Ferraura, rotjet o judía verde ancha (400 grs.).

Garrofón (100 grs.)

3 o 4 alcachofas

Judía blanca o tabella (100 grs.).

Agua

Aceite de oliva virgen (15 cl. o 150 grs.)

Arroz (320 grs.)

Sal
Tiene sus ingredientes fijos, yo la debo haber tomado una o dos veces en mi vida de casi 50 años ya, pues me gusta mucho más otras recetas, que no se llaman paellas, se llaman arroces y que son más habituales en toda España, aunque despectivamente desde Valencia se le llame “

Thank you for the knowledge about the dish and the recipe so we can make it at home too! I remember my first paella when I visited Spain. I will never forget the flavors, the size, the communal eating. It was lovely. Do most people in Spain own such a (paella) dish?

I have 2 paellas in my house for 4 food rations, and another for 8. In Spain it is usual to have at least one at home, especially in the Spanish Levante.

I have 2 paellas in my house for 4 food rations, and another for 8. In Spain it is usual to have at least one at home, especially in the Spanish Levante.

The paella looks so delicious! It’s unbelievable tasty!

I’ve tried for the first time paella this year in May when I visited Madrid. First I thought that I will not like it because of the seafood inside but then when I’ve tried it I wanted to eat this food all day til the end of the trip. Not everywhere the paella was good but I think is a must food to be tried. Here you can see photos of mine of paella:

I can imagine how much tastier it’s in Valencia where it’s made.

 

I have two good news for you.

1 - The best rice dishes are the ones you see little seafood.

2 - You don’t need to come to Valencia to have good rice.

The important thing about rice is that rice tastes like seafood, fish is not important, in fact, many times this fish is thrown away, it is not fish that can be eaten easily,
but it makes good fish soup.

Avoid those who call paella, and eat those who call rice and present it in paella, the container.

Although I want to visit Valencia as well and I think it will be next summer. Thanks for the suggestion about the rice and the little seafood. This information is very useful when you are in Madrid. I didn’t know about those restaurants.
