Nigeria has a tropical climate which supports the growth of crops that are rich in Carbohydrates.
So, most of the staple foods in Nigeria have very high caloric content.
This situation poses a challenge for many Nigerians who want to remain on a diet to stay in shape or temporarily cut back on undesired calories and weight gain.
In fact, the simple mention of a No-carbs diet will get many people to ask you; “what will you eat?!”
So, I started a No carbs diet about two days ago and have been working with our staple foods and grains.
In North and South-western Nigeria, is an abundance of Maize and Millet, this is processed into a kind of fermented drink called Ogi in the South-West but generally known as Pap.
We also have an abundance of beans which is predominantly grown in the North but eaten all over Nigeria.
So, this morning, I had Pap with Soya Milk and Bean cake (which we call Akara)

If ever you visit Nigeria, you should try the fried Bean Cake and Pap, it’s a Saturday breakfast staple in most Nigerian homes.
Many people who cannot get enough of this snack, find a way to buy them from Bean Cake sellers and Pap Hawkers during the week.
