In Nigeria there’s Jollof rice, which is most people’s fave and sort of our mascot food. Then there’s its counterpart, fried rice. It’s not like the Japanese or Chinese kind. There’s a lot of spice and it has to be green. It usually taste better when it’s made with chicken broth. Fried rice can be quite stressful to prepare because of the vegetable prep. The slicing and dicing and chopping. But I recently found a way to get past that : already chopped up Vegetables sold at Shoprite Asaba! It makes the work a lot easier. If you’re ever in Nigeria, try to eat some fried rice. It’s delicious.
