I am a photographer in Modesto, and have worked very hard for the 384 5 star reviews that I have received from my happy clients. I’ve noticed in the last couple of days, my review count has went down twice, now to 367. What is going on???

I can’t provide a specific answer to your question.
A review is removed from a listing if it is found to be against the policies for User Generated Contents.
The scan is periodically repeated, so it may happens even if on the first check a review was published.
This may also happen if a review is reported and checked again, or if the Local Guides who posted the review was posting a lot of inappropriate contents. This may end in removing all the contributions.
Or maybe the reviewers decided to delete his review.
Apparently there is also an ongoing issue, reported by several Local Guides, about reviews disappeared from their contribution list. But in this case it seems to be a different issue, because most of them declared that the reviews were visible on the listing of the businesses.
In any case you are addressing your issue on the wrong Community.
Businesses can ask for help on the Google Business Profile Community.
