Hey guys! I’m here today to tell you about my favourite hobby: making restaurant’s reviews on Google Maps!
I’m a Local Guide from Rome and probably if you come from abroad you can’t even imagine how important some dishes can be for a true Roman! We base our whole culture on cuisine and in particular on many traditional dishes such as Carbonara, Amatriciana and Gricia 
That’s why for me it is so important to go and try as many restaurants as I can, not only in Rome but also in other little towns around Italy!
Everytime I taste the same traditional dishes, I expect more or less the same flavour, but everytime, inexplicably, I discover that every chef makes them differently. Of course, everybody has its own recipe, which is always very similar, but probably they differ in the techniques used or maybe they put a peculiar ingredient that makes that dish special…
I also noticed that italian cuisine has changed a bit, also to go towards the growing demands of a large public of foreign tourists.
But, anyway, there is ONE thing they ALL have in common: none of them dares to put CREAM inside a Carbonara! A good italian chef can make a tasty and creamy Carbonara with a perfect texture’s balance with his/her own techniques ONLY by using simple ingredients: bacon (or better “pancetta), eggs, cheese (choosing between Parmigiano and Pecorino, or both!) and… the secret ingredient: boiling water! Lol!
So… Dear italian restaurants, you are so capable and talented… Please, stay italian! 
Moreover, for all these reasons I love to leave my reviews, so that both tourists and italian travelers can know where to find the real and best italian cuisine. I hope that my contributions are appreciated and I’m so happy when Google sends me a notice saying that my review has helped someone <3!
