Baking is one of my favourite things to do! I love trying new recipes, improving classics, and challenging myself with new designs. Baking is also a way for me to have a break from reality, it’s some much-needed me-time and provides me with an opportunity to destress and take a break from screens, something that is truly helpful during quarantine.
I want to provide you with the same opportunity. Please find below my favourite vanilla cake recipe!
Classic Vanilla Cake
Ingredients
- 500g of whipped topping
- 4 eggs
- 1 1/2 cups sugar
- 1 tbs vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
Steps
- Preheat oven to 350°F. Coat a pan with butter and then icing sugar (if non-stick is not available).
- In a medium bowl, mix together the dry ingredients.
- In a large bowl, whip the whipped topping with hand mixer until firm.
- Add eggs one at a time until fully mixed in. Add the sugar and vanilla.
- Add the dry ingredients to the large bowl and mix until the mixture becomes thick.
- Pour into pan and bake for 40 minutes.
- Take the pan out of the oven and check to see if the cake is ready by inserting toothpick inside the middle. If toothpick is wet, bake for another 5 minutes.
- Allow cake to cool in pan for 10-15 minutes before cooling completely on cooling rack.
- Shape and ice cake once completely cooled.
