My Favourite Vanilla Cake Recipe

Baking is one of my favourite things to do! I love trying new recipes, improving classics, and challenging myself with new designs. Baking is also a way for me to have a break from reality, it’s some much-needed me-time and provides me with an opportunity to destress and take a break from screens, something that is truly helpful during quarantine.

I want to provide you with the same opportunity. Please find below my favourite vanilla cake recipe!

Classic Vanilla Cake

Ingredients

  • 500g of whipped topping
  • 4 eggs
  • 1 1/2 cups sugar
  • 1 tbs vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder

Steps

  1. Preheat oven to 350°F. Coat a pan with butter and then icing sugar (if non-stick is not available).
  2. In a medium bowl, mix together the dry ingredients.
  3. In a large bowl, whip the whipped topping with hand mixer until firm.
  4. Add eggs one at a time until fully mixed in. Add the sugar and vanilla.
  5. Add the dry ingredients to the large bowl and mix until the mixture becomes thick.
  6. Pour into pan and bake for 40 minutes.
  7. Take the pan out of the oven and check to see if the cake is ready by inserting toothpick inside the middle. If toothpick is wet, bake for another 5 minutes.
  8. Allow cake to cool in pan for 10-15 minutes before cooling completely on cooling rack.
  9. Shape and ice cake once completely cooled.
  10. Enjoy!
