This is a small bakery shop in my hometown called Roots. They mainly serve hard bread which I love. Bread is not too hard and easy to eat even for kids, and the aroma is particularly nice!
This shop’s opening hours are not short. However, most of the time, we cannot find any bread there. The reason is very simple, they are really popular and privately managed, and they sell out immediately due to reservations and some customers who wait before the shop opens.
Therefore, I believe they are unrelated to food losses 
When I want bread from this shop, I call them in advance and purchase a whole loaf. It might be too big for me, but I have no problem because I store them in the freezer.

今回はわりとご近所さんの紹介です。ルーツさんという名前ですが、実際には↑の写真のような記号文字を書きます。
個人的には果物などのドライフルーツが入った系のものが好きでちょくちょく買っています。行く前に電話しておかないと写真に写っている棚のようにほぼ購入選択肢がなくなってしまうのですが、人気の個人店なら仕方ないですね。
もし岩手に来るさい、こちら行って（食べて）みたい！という場合には私にお知らせください。
実は花巻市には他にもハード系パン屋さんが何店かあるのですが、どこも開店前から並んでいたり予約前提だったりします。もしかすると結構人気のジャンルなのかもしれません。

That looks like a nice sourdough bread @HiroyukiTakisawa - I quite enjoyed the various breads I ate in Japan but this looks next level.

I tried many breads while in Japan though most of them were purchased from the 7-Eleven stores or Family mart, and not from a bakery.
Nevertheless, I enjoyed them all since they were all new to me

確かにハード系のパン屋さん、早い時間の売り切れとか多いような気がします。
ハード系も扱うお店はあっという間に売り切れてしまったとか。
フランスパンが美味しいお店（フランスパンに惣菜などを挟んでいるものも含め）も早い時間に売り切れたり、
焼き上がり予告時間を告知したりとか多いですね。
お店の数が少ないのは作り方が難しいのかなといつも思っています。

That’s right! I like plain bread, but I prefer bread with dried fruits. This bread paired well with red wine

It sounds good! Convenience store breads are also nice, but they are usually too sweet for me. So I purchase them as dessert

確かに大量生産しているイメージがないですね。もしかすると材料や作り方に個性があり希少性もあるほうがハード系パン屋界隈ではウケるのかもしれません。その方がロスがないだけでなくスケジュールも調整しやすく、お店としても助かりそうですね。長く続けていってほしいものです。
