Malaysian steamed Layer Cake - Kuih Lapis

Today is the first day of Ramadan, and I needed something to join friends for Ifthar (breaking fast) in the evening. I looked up in my pantry in the midst of our movement control stay home order. And I had some basic ingredients to make a popular local pastry, which is steamed Layer Cake or locally known as Kuih Lapis.

Very simple ingredients

1 cup sugar

2 cups rice flour

2 cups water

1 cup coconut milk

  • mix everything together, divide into 2 portion, and color 1 part red with red food coloring.

[Picture above] Oil a metal steaming pan slightly. Then layer a thin layer of white batter. Put into a strong steamer

[Picture above] After 3 mins of steaming, add a alternate thin layer of red batter. Steam for 3 mins. Repeat until all the batter is finished or the tin is full.

[Picture above] Remove from steamer and let it cool down.

[Picture above] Cut into rectangles and serve warm or cold.

How about using beetroot extract or beetroot powder instead of red synthetic food colour ?

I only made this today from whatever I could find in my room. :blush:
