Hey all,
Here’s one more tried and tested recipe recreation during lockdown. I made restaurant style Paneer Chilli at home, an Indo-chinese starter that is very popular among starters. It turned out amazing.
Ingredients:
300 gms Paneer
2 capsicums
2 medium-sized onions
3-4 green chillies
Finely chopped ginger, garlic
4-5 tbsp Tomato ketchup
2-3 tbsp Chilli sauce
Oil for frying paneer
4-6 tbsp Corn flour
2-4 tbsp all purpose flour (maida)
Salt and pepper

Recipe:
For paneer coating:
Cut the paneer into small cubes. In a bowl, add salt, pepper, 2-3 tbsp of cornflour and the diced paneer cubes. Gently coat the paneer with the added ingredients with help of spoon and leave it aside for 20 minutes.
For chopping veggies:
Cut the capsicum in small triangles. Cut the onions into half and peel the layers. Refer Pic 1 above.
Cut the green chillies diagonally.
For frying paneer:
In a bowl, add 3-4 tbsp of all purpose flour, 2 tbsp of cornflour, salt, little water to make a thick paste.
Now, add the coated paneer cubes (4-6 cubes at one time) in this paste and put them in the pan for deep frying. Fry the cubes till they turn golden brown. Refer Pic 1.
For the making of Paneer Chilli:
In a pan, add 2-3 tbsp oil, once it is heated well, add ginger, garlic and chopped green chillies. Now add chopped onion and fry till they turn soft. Now add chopped capsicums and add tomato ketchup, chilli sauce. Cover and cook for 2-3 minutes. We have to make sure that veggies are half cooked. For adjusting consistency, mix 2 tbsp cornflour with water (this is called slurry) and add it in the pan. Now, add the fried paneer cubes and mix well. Cook for 1 minute on low flame and serve hot. You can garnish with chopped spring onions.
