Lockdown Learning

The forced stay at home is an opportunity to utilize time in learning new skills. I am trying one new thing every day. Baking was never in my comfort zone. As I woke up today, three bananas were staring at me as I passed by them to kitchen to make my morning tea. Their eyes brimming were brimming with hope to save them. Baking…yes, I will do something in baking. I scanned the net to find a suitable recipe of banana cake. Since, I don’t eat eggs, it took some time to select a reasonably good recipe. The outcome was awesome. I added some crushed almonds on top. The taste and look was great. Hope to create some more magic …

I am craving some banana bread now. Thank you for the inspiration!

I am not a good baker myself, however, when it comes to banana bread, I have made a long list of successful experiments. I like using flour from spelt, as it makes the banana bread extra soft.

What kind of egg replacement did you use? I have used apple puree and flax seeds in the past. I open to more suggestions. :slightly_smiling_face:

Thanks for going through the post and responding. Bananas are replacement for eggs. When no eggs are used, one needs to use both baking powder and baking soda. This combination produces enough carbon dioxide in baking to make the product soft and spongy. Happy baking… Let me know how it comes out… :blush:
