Litti Chokha is one of my favorite street foods. As a result, I have acquired the skill of preparing it at home. Traditionally, Litti Chokha is a dish from Bihar.
Ingredients
For Litti:
2 cups whole wheat flour
1 cup sattu (roasted gram flour)
2 tbsp mustard oil
1 tsp ajwain (carom seeds)
1 tbsp finely chopped garlic
1 tbsp finely chopped ginger
2 green chilies (chopped)
2 tbsp finely chopped coriander leaves
1 tsp lemon juice
Salt to taste
Water as needed
Ghee (for serving)
For Chokha:
2 large brinjal (eggplant)
2 medium tomatoes
2 boiled potatoes
1 small onion (finely chopped)
2-3 garlic cloves (finely chopped)
2 green chilies (chopped)
2 tbsp mustard oil
1 tbsp finely chopped coriander leaves
Salt to taste
For Dhaniya chutney:
1 cup fresh coriander leaves (dhaniya)
2 green chilies (adjust to taste)
1-inch ginger (peeled)
2-3 garlic cloves (optional)
½ tsp cumin seeds (jeera)
1 tbsp lemon juice
½ tsp salt (adjust to taste)
¼ cup water (as needed for blending)
Typically served with ghee, litti consists of roasted wheat dough balls stuffed with spiced sattu (roasted gram flour). Chokha is a mashed side dish made of roasted eggplant (baingan), boiled potatoes, and tomatoes, seasoned with mustard oil, garlic, and green chilies.
The dish is typically served with dhaniya (coriander) chutney. Litti Chokha is unique because it is traditionally cooked over charcoal or cow dung cakes, giving it a distinct earthy aroma. Sattu is a natural coolant and nutritional powerhouse, making litti both healthy and energy-boosting. This recipe is rich in fiber, protein, and healthy fats.
