One of the healthy, nutritious rice preparation commonly served across South India through out meal times. It’s truly yummy and wholesome.
Cook the rice and keep it ready. Ensure that the grains are not sticking each other.
Use two or three fully riped ? lemon, and take the juice without any seeds, add quarter teaspoon of turmeric powder in it and keep aside.
Take a frying pan, add oil in it and let it turn medium hot.
a) Add a teaspoon of Channa dal ( Chick peas) along with spoonful of peanut, let it fry to Golden brown.
b) Take three dried red chilly,cut it into large pieces and add along with chick peas.
c) Add Quarter teaspoon of mustard seeds and let it sputter.
d) Add few curry leaves.
e) Pour the lemon juice in to the frying pan, add required salt to taste.
Add the rice in to frying pan with and mix the ingredients well.
You can serve the lemon rice along with Pappadam as accompaniment or can serve along with potato wafer.

Try it out with chillies, it doesn’t turn spicy, but while it get fried in oil alongwith other ingredients, it gives better flavor. The spiceness will not get on to rice.
