Lazy pumpkin pie #CommunityChefChallenge

Do you love pumpkins as we do in Ukraine? Baked slices, cereals, salads, soups and desserts - a pumpkin can perfectly flavour all that and even more.

Here I want to share a very simple recipe of a cottage cheese pie by a Ukrainian chef Yevhen Klopotenko. He is famous for promoting Ukrainian cuisine and the initiative to modernize a school canteen menu.

The pie is perfect as it is delicious and absolutely easy to cook. Tested myself and made my colleagues and family eat it - all of them are alive and very content with the treat :grin:

Ingredients

• pumpkin - 500 g

• cottage cheese - 400 g

• eggs - 2 pcs

• flour - 2 tbs

• sugar - 2-3 tbs

• vanilla sugar - 1 tsp

• butter - 1tbs (optional)

• salt

• chocolate bar

35 min preparation, 40 min baking

  1. Cut a pumpkin in halves and bake in the oven at 180 C for 30 min.

  2. During this time put the rest of the ingredients (except butter and chocolate) into a bowl. You can use either wheat or rice flour and substitute vanilla sugar with liquid vanilla extract.

  3. Take out the pumpkin flesh with s spoon and add it into the bowl.

  4. Process everything with a blender until a smooth puree.

  5. Butter the casserole dish or use baking paper.

  6. Put the mass into the dish and bake for 35-40 min at 180 C.

  7. Cover the top with grinded chocolate while the pie is still hot. Another way - put cut chocolate before baking like I did.

And the last but most important step - savour the delicious homemade pie.

The good thing about this pie that it is not sugary and requires a simple set or products that can be easily bought in small shops or from street vendors. Whenever possible, I try to buy from street vendors as they are often elderly people who need to earn additional money due to low pensions. So, they grow vegetables and fruit, as well as flowers, in their gardens to sell for reasonable prices. If no such vendors, I can always drop in at the nearest shop or supermarket.

@AdrianLunsong , it’s as easy as it sounds, I kid you not))

This dessert is kind of dietary, which is good as many people can eat it. An you can easilymake it a main course - just don’t add sugars.

I love the way you supported the street vendors by buying the ingredients to make this yummy dessert.

Have you ever made a pumpkin pie without oven? If so, I would be pleased to know the recipe.

@Velvel , lazy because it doesn’t require much effort - just mix everything and bake.

I’ve never cooked a cake without an oven. I guess it’s possible to make something like pancakes or omelette with pumpkin.
