Here is my entry : Beetroot Halwa (A dessert)
On the occasion of Gudi Padwa (Hindu New Year), my mom made this delicious dessert. Beetroot Halwa has a rich, earthy sweetness with a slight caramelized flavor. The vibrant red color and the aroma of ghee and cardamom is heavenly. This halwa is unique because it’s nutritious and requires minimal ingredients.
Me and my niece don’t like to eat raw beetroot, though it has many healthy properties. So my mom found a way for us to enjoy it in a delicious form!
For this we just need few ingredients:
2 medium beetroots (grated)
1 cup milk
3 tbsp sugar or jaggery
1-2 tbsp ghee
Dry fruits
½ tsp cardamom powder (optional)
Instructions:
Heat ghee in a pan, add grated beetroot, and sauté for 3-4 minutes.
Add milk and cook on low flame until the beetroot softens and the milk thickens. Stir occasionally.
Add sugar and mix well. Cook for another 5-7 minutes until it reduces.
Stir until the halwa leaves the sides of the pan.
Sprinkle cardamom powder and mix. Garnish with chopped nuts. Beetroot Halwa tastes great both warm and cold; I personally love it cold!
