**KENKEY FISH & FRESH PEPPER SAUCE/****SHITO(**updated on request)
This is a typical Ghanaian dish and infact it’s the staple food not only here in Accra the capital city,but in the southern part of Ghana. As Acheike is to the Ivorian and Eba is to the Yorubas in Nigeria,so is Kenkey to the Ghanaians. It’s made out of white corn dough. Corn is a very important part of nutrition here in west Africa. It can be eaten roasted or boiled as @Austinelewex wrote in his Post of recent. In the North of Nigeria and even of Ghana the Milled corn powder is made into Tuo as well.The preparation of Kenkey process takes 2 days. It’s a bit difficult to prepare on a small scale at home therefore for the most part of the time its bought out on the streets and fairly cheap too. Its wrapped in corn husk. It is slightly fermented too and therefore has a very nice sharp taste. It’s very filling.
The fresh pepper sauce is so nice you could lick it all on it’s own. It’s often mixed with onions and "Shito". This is a very spicy sauce brown black in colour. Its made up of local spices.
In Ghana there is a festival dedicated to this dish once every year “Kenkey festival”

Like in Enugu, her staple food is Abacha aka African salad and Okpa .
But I believe here in the entire southern part of the country every one should have eba and rice in their home. For these reason I could say eba and rice are Nigerians staples.
I would love to try kenkey and the corn meal of the Ghanaian people and actually give reviews.

Yes @SarveswarB it’s also called Donkunu but this is pure corn dough. It’s quite delicious it was my dinner yesterday I enjoyed it thanks for your interest and comments.

As for Nigeria Its a very big country and our diversity too so the staple food varies across the country. In the North they have Tuo and in some parts fo the west pounded yam.
Now for Abacha and Opka I also know them well I was in Nkwagu in Ebonyi state for secondary school so I know them. I like Okpa so much. I think it’s a good thing to write post about our African food and culture and heritage quite often.
