Jerk Chicken with Rice and Black Peas

Jerk chicken in a specialty of Jamaica and was developed by escaped slaves using cooking methods and ingredients that were available locally. Chicken is dry rubbed with jerk spices containing allspice and scotch bonnet pepper making this a spicy food. Originally cooked over pit fires but more recently in oil barrels over charcoal to recreate the distinctive smoky taste. Served with rice and black peas (small kidney beans) and a jerk sauce this is a Jamaican classic.
