Javanese Exotic Dish: Roejak Cingoer

Hi again…

This time I want to introduce you one of popular dish here in my city, Malang, Indonesia. It was called ROEJAK CINGOER, which is means “stewed vegetables, ox nose, and any-leftover with peanut and shrimp-paste sauce.”

The component of this dish may vary, depends on what’s available at the time. Yes. Basically roejak cingoer is just any-leftover at the kitchen, such as fried tempeh, fried tofu, rice cake, and fried mendjos (read: man-just; if I tell you what it is maybe you will loose your appetite, so I better shut up), that was left-over from the dinner last night.

After that we add any veggies that available at the garden, such as spinach, long bean, sprout, and cucumber, and then add stewed ox nose (Indonesian: cingoer) and stewed beef tripe (yes, I eat beef tripe besides I eat friends too) to make it more special, and lastly pour some peanut and fermented shrimp-paste sauce on top of it.

Some would say it was not appetizing! It looks dirty! And I’m sure some of you would feel stomach ache after eat this dish if you don’t used to eat this dish. Hahaa… But that’s normal reaction. Maybe that’s because of the fermented shrimp paste (Indonesian: petis; read: pet-ish) that used in the dish.

For us Javanese, this roejak cingoer is delicious. Savoury with a little sweet taste depends on what kind of fermented shrimp paste that used in the sauce. We usually eat roejak cingoer for lunch. Some would add rice on it to make it more full of energy.

One portion of roejak cingoer is just ten thousand rupiahs, or less than one dollar. Quite cheap, right?

Hah? Really? You never try this dish, Mbak @Nyainurjanah ?

Maybe because it’s an East Java dish, the taste is way too strong for Sundanese.

But if you never try this, just becareful with your stomach. The fermented shrimp paste is quite strong. You could get a little stomach ache :grin: :grin:

Roejak cingoer memang makanan khas Jawa Timur. Beberapa teman dari luar Jawa Timur yang pertama kali nyobain langsung mules. Ga tahan petisnya. Hahaa

Thank you for sharing this great post about the local dish of yours and the amusing way you’ve presented it to us.

I believe every nation has its dish that contains fridge leftovers, and of course, it is country-specific because of the local ingredients.

I’m positive that I will like the Roejak Cingoer, but not sure how my stomach will react to the shrimp paste, however I’m willing to take the risk. :smile:

Yes, this roejak cingoer is delicious. But the fermented shrimp paste is rather problematic for some people who are not used to eat something like this.

But it’s not roejak cingoer if it wasn’t use the fermented shrimp paste.

For the lighter version, maybe you could try rojak. It’s just fruit salad (mango, cucumber, and some other local fruits) with peanut, palm sugar, and tamarind sauce. It has sweet and sour taste.

And thanks for the tips you’ve shared. Very useful. But take a proper photo of roejak cingoer is not easy, since the fermented shrimp paste sauce has very dark brown-ish color. My camera’s metering could not capture it properly. I’m sorry
