Japanese traditional Pickles”NUKAZUKE”

There is many delicious food in Japan, and now they become very popular in the world such as sushi, tempra, yakitori, and ramen etc…

Here,I would like to introduce you a Japanese traditional Pickles”NUKAZUKE”.

Nukazuke is one of the Japanese traditional pickles.

We make Nukazuke by wrapping various vegetables with Nuka which is a paste of mixed rice bran, salt and water.

Nuka ferments vegetables and makes delicious pickles.

In the days without refrigerators in Japan, we had made Nukazuke at each home to preserve vegetables.

But This habit decreased with the times, and furthermore, it was hated by young people because the Nukazuke have a smell.(just like Natto)

Recently, however, Nukazuke have once again attracted attention from the viewpoint of good for health.

And from the viewpoint of food preservation, Nukazuke play a big role.

Delicate vegetables that are unsuitable for transport can be transported by pickling them.

There is an example.The eggplant which is a specialties in the Osaka Senshu area, called “Mizunasu” that means water eggplants , could not be transported in the old days, because it is very delicate, but now they can be transported throughout Japan thanks to Nukazuke technology.

Nukazuke may give vegetables who are not exported to the world now a chance to go to the world.

When you come to Japan please try to eat Nukazuke!!
