It's all about flavors

I remember since always to stop near the road with my family to try something new when I was traveling around Colombia, only people from Colombia could understand that way to see the food, the fruits, the flavors that you can find, but with that point of view, i learn to feel other cultures based on their flavors, i really enjoy to try new dishes and to start to understand directly from the taste what a culture has to offer.

You can feel passion, you can feel the way that they do things and express themselves, with local dishes you can understand a country, their landscapes, their agriculture, how far are they from the sea, what local products are commonly used, if the people are risky to mix or simply use some salt to spice up, you can feel an entire new experience in your mouth that elevates you to another place or you just can feel more deeply your surroundings.

For someone a dish like this one could be very weird, for my looks like home, it represents the variety that Colombia has to offer, different potates, corn, cassava, arracacha, plantain, hogao (a mix of tomato with onion very tastefull), cilantro, carrots, avocado, rice, and a salad … i don’t think that just with this dish i could show all the regions in Colombia, but i know that someone that could undertand about the taste can understand how complex and creative could be the Colombian people just seeing this dish, is just an expression of our country, this is just one of some local dishes available in Colombia, now imagine how tastefull, happy and diverse could be our country and its people, that’s why i think that it’s all about the flavors.
