Italian Stracchino Cheese Focaccia (“Focaccia Col Formaggio”)

This is one of the classics of Italian cuisine. Cheese focaccia is a very soft and thin preparation which has origins in the Ligurian city of Recco and which is topped with oil and stracchino cheese (some people use to add another particular local cheese whose Ligurian name is “prescinsêua”, which in Italian is commonly translated as “cagliata” or “quagliata”, even if the Consortium preserving this typical product suggests not to use it).

You can find cheese pie in many Italian bakeries even if, due to the registration and protection of the products and its name, the only authentic “focaccia col formaggio di Recco” can be tasted only by visiting Recco town.
