The name “sorrentina” comes from the Southern Italy area of Sorrento. This very simple recipe consists in potato gnocchi (which are a popular alternative to pasta in Italian cuisine) with tomato sauce and mozzarella cheese (as always, authentic Italian mozzarella cheese should be used for this dish, not dried surrogates of mozzarella cheese which are more easily to be found at a cheap price in supermarkets abroad). At the end, the mix of tomato sauce and mozzarella cheese has a taste similar to pizza: the recipe is very tasty!
