Day off so I have time to make dessert , usually when I make dessert I need more time to prepare.
Flour 、sugar 、salt mix together , heating milk and butter and mix with flour and use scraper to stir, when temperature down to 65°C than put egg inside to mix. When batter is done we can put it into oven to bake, 210°C 15 minutes and 180°C 10 minutes in the end 100°C 10 minutes.
I know appearance looks not good ,but it’s not finish yet.
And then we make crème pâtissière , we need egg yolks 、sugar 、flour 、milk、corn flour and matcha, heating everything and keep stirring .
When it’s done looks much better and I make some ice lavender tea, what the wonderful day.

Don’t say that your homemade éclair doesn’t look good. It looks so nice actually and appetizing, especially with the matcha cream on top

Honestly, it’s the first time ever I see an eclair with matcha cream, very original! Did you make the ice lavender tea as well?
Personally, I love to cook as well and when it comes to desserts and especially French pastry, the Bourdaloue pie is my signature! Have you ever heard about it? It’s mostly made of almond powder and pears.
I’m sharing with you a photo of a Bourdaloue pie that I did a few months ago.

Indeed, this pie is usually served warm with some ice cream on the side! However, I like it even cold.
