Indian Traditional sweet Mango pickle - Murabba

Summer is a favourite time of the year for me, not only me but many Indians

No not because of sunny days but because it is the season of our beloved fruit mango,

Mango is also our national fruit and we have many different varieties that grow from the month of mid march upto June.

The raw mangoes are used for making traditional Indian pickles which is stored for whole year in a glass Jars, the pickle gets tastier as it matures, every state and region has a different way of preparing mango pickle which makes It more unique.

Raw mangoes are also used to make Raw mango chutney and Aam panna which is known for it’s cooling properties and provides energy during summer time specially if we spend more time outside in sun.

The ripe mangoes are consumed in different forms and dishes.

Most popular one is aam ras (pureed mango) which is consumed with puri a popular seasonal menu aam ras puri

Mango milkshake, mango ice cream, mango cake are some other popular items made using ripe mangoes.

Today I would like to share my favourite sweet Mango pickle which is known as Murraba

A traditional sweet pickle made using few ingredients but has a delicious mango flavour.

Ingredients needed:

6 Ripe Alphonso mangoes (make sure they are not over ripe it should be semi ripe)

Sugar (quantity of sugar should equal to quantity of mangoes used in terms of grams)

Cardamom pods 8-10

Saffron (optional)

Method :

Peel and chop mangoes into small and medium pieces, measure the quantity using a kitchen scale,

Take sugar of equal proportion and mix them and cook it in a pan on medium flame till sugar melts.

the mixture will get watery and foamy as it boils

Once the sugar starts has melted add crushed cardamom if you don’t have cardamom pods you can use powder.

Cook it till sugar melts completely and has oranges yellow shade and the quantity reduces as you can see in gif below.

make sure to keep stirring it or else it might get stuck to the bottom of pan.

Turn off the flame and let it cool down to room temperature, pour it into a glass jar and store it.

you can consume it with chapati or use it as a jam too,

This pickle can be stored for a year but make sure to open the jar and keep checking

Alphonso mangoes are mostly used for this as it has sweet and tangy flavour.

I too love mango. But have not tasted Murabba, you had explained its recipe in simple way. So let me try it in small amount and will share the taste @FalguniP .

Yesterday only we prepared Mango Panna and that too from the mangoes from our colony trees :smiley: .

This pickled mango sounds and looks delicious. I bet it would be great to eat it in the morning for breakfast on a toast. What do you think? Do you have photos of that mango cake that you’ve mentioned? I am curious to see how it looks like. Do you put the mangoes on the top?

@SarveswarB murabba is one very old recipe but not much popular cause people usually prepare the tangy and spicy pickle, murabba can be made using raw mangoes or Aamla / Indian Gooseberry also.

try making a small portion I am sure you will love it!

@Ewaade_3A Thanks sweetie, when we have mangoes at home we make different things using it, as we get it for a limited time we try to experiment with different dishes.

and mangoes from own trees are the best, did you made Aam panna using roasted method or boiled method?

Yes @FalguniP enjoying fruits from our own has different kind of enjoyment :smiley: . We made Aam panna by boiling method :blush: . Did not try roasted method yet. If possible give short description of roasted method. Thank you :blush:

Hi @MoniDi , You are right, it is a delicious breakfast idea to have it on toast.

here is the mango cake I made few days back, it is made using simple vanilla sponge cake which is frosted with whipped cream, mango puree and and mango pieces in between the layers, for the topping here I used mango puree and pieces with some golden sprinklers.

it is very delicious and one of my favourite cake

I love Aam ras we often have it these days.

This was one of my dinner plate with aam ras and pulav with differnt types of papads.

Aam ras is a must eat these days I love to eat it with roti or just add little milk and freeze it and make aam ras ice cream :yum: You are right mango is any form is delicious !!
