Last weekend I made seafood Paella and beef Wellington . And I prepare beef for really long time.

for paella I use prawns 、squid 、clams (I can’t buy mussels)and lemon . For seafood I just simply fried and seasoning with salt、black pepper , I use some prawn and clam to make soup stock and I put rice in pot to boil with soup stock for around 10 minutes with paprika 、bay leaf and turmeric .

after that I put seafood on the top and put it into oven so we can get some crispy rice, when we finish all of this and I put some lemon on it.

For beef Wellington I use fillet 、Parma ham 、chestnut and mushroom , I chopped with 3 different kind of mushroom and chestnut , seasoning with salt and pepper and fried, we need to make it dry or otherwise I will be difficult for next step , and we slightly fried each side of beef after this step we spread mustard full of beef, and we warping beef with mushroom and outside use Parma ham, try to squeeze it, make it as tight as possible and put it into refrigerator for an hour.

After cold down we wrap it with puff pastry and put it back to refrigerator for another half hour, then spread egg yolk on pastry and then put it into oven 200° for 25~30 minutes , after long time waiting we can finally enjoy the meal.

Your dishes look amazing and I am sure they were also super tasty! I have never prepared beef Wellington but it is something I would definitely enjoy.

For the paella, did you add some white wine while frying the seafood? I always do that and that’s also a good excuse to drink a glass during the preparation. :slightly_smiling_face:

@Giu_DiB Thanks for the advice I didn’t use white wine on paella this time , because before I use it I already finish my bottle ^^
