A few weeks ago I made a list* of groceries helping the elderly during the Pandemic.
I don’t know where to see how many people is entering it (I see figures for pictures and reviews, but not for lists, I’m afraid).

I’m not sure you can. I checked on Desktop and in the Android app. You can find your lists on your profile, but the number of views is not listed. Only the number of followers is listed.
If your list gets selected by Google to be featured on your city’s page, then the number of views will be shown. I don’t know how Google selects which lists to feature or what we should do to increase our chances of getting featured.

I don’t think is that important as to be selected, but it is for me and a bunch of nice people.

As @MortenCopenhagen has informed you, you are not able to see the number of views of your list but only the number of followers that the list has. Precisely for that reason, I’ll mark his post as an Accepted Solution.
