How to make a vegan tajin "traditional Moroccan food"

Berber tagine with vegetables

Ingredients:

2 red onions
2 cloves garlic
4 potatoes
2 carrots
2 tomatoes
2 zucchini
1 red or green pepper
1 teaspoon of ginger
1 teaspoon of turmeric
1 teaspoon paprika (sweet pepper)

Some saffron pistils
Salt and pepper
Mixed parsley and chopped cilantro
5 tablespoons olive oil
1 good wrist of green olives
Preparation:

Start by lighting the barbecue, to allow the charcoal to turn into embers! If you use your stove skip this step.
Peel and cut the vegetables into thick strips, mince the onions; cut the tomatoes into slices; chop the parsley and coriander.
In the tagine put the olive oil then make a bed of onion at the bottom, add the slices of tomatoes.
Then arrange the carrot strips vertically, the zucchini, the peppers and then the potatoes so as to obtain a perfect dome.
Place the parsley and chopped cilantro on top.
Add the garlic cloves to the bottom of the dish.
Cover with the lid and put on low heat for 1 hour 30 minutes to watch!
Serve immediately!
